Twisted Cheesepie! (Στριφτή τυρόπιτα)


If you want your whole house to be smelling delicious, then this is the pie to make! I made it last night and I could not resist the temptation of having a piece while it was still warm, but it is as nice cold as well. The recipe is for a small round tray of about 40cm diameter, but it will hold even on a rectangular tray.


Ingredients:

300gr of filo pastry
450gr feta cheese, crumbled
100gr parmesan (optional), grated
4 eggs, whisked
75gr salted butter, melted and cooled down
Olive oil
Pepper

Preparation:

Lay your mix like so and roll
Add the feta, the parmesan, the whisked eggs and 1 teaspoon of pepper in a bowl and stir. Once the heated butter has cooled down, add it to the mix and stir. If it is still hot, it might cook the eggs, so careful to ensure it is cool. Your mix is then ready.
Lay one filo on your working surface and brush it with some olive oil. Add about 3 spoons of the mix on the one side and roll it.
Lay your first roll like this to start the twist
Place it in the middle of your tray, which you must have brushed with oil, creating a circle around itself, as per photo. Continue with rolling the rest of the filo the same way and add them on the tray by placing them where the previous roll had finished. Ensure you brush them with oil once you place each one, so they will stick to the next.
Once you are done with all of them, brush the top of the pie with oil and place in a preheated oven at 190 degrees for 1 hour or until golden and crispy.
Resist the temptation of cutting it for at least 10 minutes, as it needs to rest

  1. Ok so I had a go at this one tonight and it came out surprisingly well. I thought Id had a disaster when I pulled out the filo from the freezer and found that half of it had gone crunchy and dry and the other half was stuck together. But managed to find enough good bits in the middle to make a half size pie. Cheers for the recipe cant wait to find out what I'll be cooking next.

  2. oh bummer for the filo, that happens when they refreeze it after it's gone soft. I wouldn't buy of the same place for a while if I was you... I hope the rest of it at least came out ok!!
