This is definitely in the easy cooking section and quick as it takes me roughly 25 minutes from start to finish. Very refreshing and summery. Here is the recipe for 2 servings
Ingredients:
400gr of spaghetti
250gr of passata or 3 large tomatoes, peeled and chopped
1 red pepper, thickly chopped
1 onion, chopped
1 spoonful butter
1 teaspoon oregano
1 handful of parsley, thickly chopped
Olive Oil
Salt and Pepper
Preparation:
Start by frying the onion and the peppers at the same time. Once they are browned, add the tomatoes or the passata, whatever you prefer, as well as the ½ teaspoon salt and ½ teaspoon pepper and the oregano. Leave in medium heat for 10 minutes, stirring occasionally and once you bring off the heat, add the parsley and stir slightly.
Whilst the sauce is cooking, get the spaghetti ready. You will need to boil 3 litres of water with 1 teaspoon of salt and 1 teaspoon of olive oil. Once it comes to the boil add the spaghetti and stir occasionally until it is done. The time is as per the instructions on the packet! Once it is ready, drain it and then add the butter in the pan in a medium heat and the pasta. Stir to ensure the butter covers the pasta and bring of the heat.
Should be ready to serve! Add as much cheese as you like. I crumble some feta cheese on the top, but it is not necessary!
