This is such a summery food, very light and also very pleasing on the eye! It can serve as a main dish or as a party food and it is extremely quick to make. Recipe is for 4-6 servings
Ingredients:
3 chicken breasts, cut in chunks
400gr (1 ½ cup) rice
1 red pepper, cut in chunks
1 yellow pepper, cut in chunks
1 onion, chopped
4 carrots, peeled and cut in chunks
1 handful of parsley, chopped
Olive oil
Salt and pepper
Preparation:
Start by browning the chicken with 1/3 ladle of olive oil in a pot or wok. Once chicken is ready add the onion, stir and 2 minutes later add the rest of the vegetables. Stir to ensure they all get some of the oil on them. Add 1 spoon of salt and 1 teaspoon of pepper. Then add 5 cups of boiled water, stir and then add your rice. Stir again and turn to medium to low heat once it comes to the boil.
It should take about 20 minutes or until the liquids disappear and the rice is done. Once you remove from the heat, add the parsley and stir one final time.
