Lemonato Kotopoulo (Chicken with mushrooms in lemon sauce)

 This is one more of my favourite foods. It reminds me of Sundays back in Greece usually and it can be served either with rice or chips. It’s brilliant either way. I did mine with rice today, as per photo! Recipe below for 4 servings:


Ingredients:
4 chicken breasts (about 750gr roughly)
300gr of mushrooms
1 large glass of white wine
2 lemons
2 teaspoons of flour
3 gloves of garlic
Olive oil
Salt and Pepper
Oregano

Preparation:
Add one ladle of olive oil to the pot and once warm, add the chicken breasts. Leave them for roughly 3-4 minutes on each side, so they create a bit of crust which will ensure they don’t crumble whilst cooking. Add the garlic gloves in the same time as the chicken, as well as salt, pepper and the oregano. Roughly one teaspoon of oregano will do. Then add your mushrooms, which should have been cut into slices beforehand. Stir and then add the white wine. This will come to the boil quite quickly as all the acidity will dissolve. Add one medium sized cup of water and close the pot. I use a pressure cooker, where it takes roughly 10 minutes on the heat and another 10” until it is ready to open. On a normal pot, add one extra cup of water and allow roughly 35 minutes on a medium heat.
In the meantime, squeeze the juice out of your lemons and stir with the flour, ensuring the flour is dissolved completely and there are no “bits”. Once the pot is open, add the lemon with the flour sauce and stir gently.
 If you feel there is more sauce than required, bring back to the boil or add some more flour which you can dissolve in some of the existing sauce. You can serve either with chips or rice or both!!
