Little CheesePies (Τυροπιτάκια)

As I made the courgette pie last night, I had some filo left, so made some cheese pies as well. Now, there are many variations of how you could make these. So, this is only one of the many and it is ever ever so easy to make. This is for a small portion, so you would end up with roughly 10 of them.




Ingredients:

100gr feta cheese, grated
100gr edam cheese, grated
1 egg
½ cup milk
Pepper
200gr filo pastry, roughly 3 of them

Preparation:

Mix the feta cheese, with the edam, the whisked egg, the milk and ¼ teaspoon pepper. Lay one filo and cut it into 3 equal rows, brush them with a bit of olive oil. Add one full teaspoon of the mix at the edge of the filo and start folding them into a little triangle, the best way to describe this, is the same way as they would fold a flag! Once you have your little triangle, place it in a not stick tray or else make sure you have sprayed your tray with oil. Repeat folding until you are done. Then brush oil on top of all of them.
Place them in a pre heated oven at 220 degrees for 25 minutes and they are done! You could also deep fry them, which would only take about 5 minutes, but I prefer them in the oven.
