Fried Tomato and Eggs (Καγιανά, Ντοματαυγά)

This is a very summery recipe, especially as tomatoes are in season and it needs quite a few. Very simple recipe and very tasty. It can be served as a main dish as well as a meze dish. The recipe is for 3 good portions.

Ingredients:

7 medium sized tomatoes, the juiciest ones, peeled and chopped
             Or 4 tins of chopped tomatoes (the cheat!)
5 eggs
1 ladle of olive oil
Salt and Pepper

Preparation:

Add the tomatoes in a non-stick frying pan and let them boil so the liquids purify and you are left with pure tomato. Make sure you stir occasionally. This stage usually takes about 20-25mins. Once all the liquids are gone, add the olive oil, 1 teaspoon salt and half a teaspoon pepper and stir. Leave for 2-3 minutes and then add the eggs one by one around the frying pan. Leave them on top of the tomatoes for 2-3 minutes until they start going white. Then stir gently so that they mix softly within the tomato. Do not over-stir cause you will end up not being able to see the egg at all. Leave for another 5 minutes and it should be ready.
You can also add slices of pepper if you like, which should be added from the beginning together with the tomatoes.
Don’t forget the feta cheese and lots of bread on this one!!

  2. to tell you the truth, even though I am vegetarian and it seems as an easy recipe, i never had the chance to prepare it. mmmmm. my mouth waters.
