Greek style meatloaf (Ρολό με πατάτες στον φούρνο)


You will find many variations of this food, but this is by far my favourite one. Relatively easy to make. Recipe is for 5-6 servings.


Ingredients:

1kg Minced beef
6 eggs
1 onion
6 french toasts, crunched
6 potatoes
5 slices of mozzarella cheese
1 bunch of parsley, chopped
1 spoon of dry dill
1 glove of garlic, finely chopped
1 medium sized tomato, chopped
1 lemon’s juice
Oregano
Olive Oil
Salt and pepper

Preparation:

Start by boiling 5 eggs, until they are hard. They should take about 10 minutes. Peel them and let them cool. In the meantime, mix in a bowl the mince with the trimmed French toast, the onion, garlic, parsley, dill, chopped tomato, 1 egg, ½ ladle of olive oil, 1 spoon of salt, 1 teaspoon of pepper. Mix then until the ingredients don’t stick to the sides of the bowl. You do not want the mix to be soft, as it will not roll properly. If you find it is soft, add a couple more slices of French toast trimmed. Lay a piece of cling film on your working surface and lay the mix and spread it until it is roughly 2cm thick. Try to make a rectangular shape. Once laid, place in the middle on a row the mozzarella cheese and then on the top the 5 boiled eggs. Sprinkle a bit of salt and pepper on top of the eggs. Then, using your cling film roll the mince mix until the sides meet and the eggs are hidden. Squeeze the edges so the two sides mix and you can’t see the separation. You should now have the whole roll rapped in the cling film. Place it in the fridge for 1 hour so it hardens , otherwise it might crumble and open if you try to bake it like this.
In the meantime, cut your potatoes, like wedges. Once the roll is ready to come out of the fridge, place in your tray, together with the potatoes, Sprinkle the lemon juice on top of the potatoes and the roll, add 1 spoon of salt, 1 teaspoon of pepper and 1 teaspoon of oregano as well as ½ ladle of olive oil.
Place in a preheated oven at 220 degrees for 1 hour and 20 minutes. If the roll is done before the potatoes is ready, cover it with foil and place back in the oven.
Let it set for 10 minutes before trying to cut.
