Mosaiko (Μοσαΐκό)


Yesterday was my nephew’s 2nd birthday and being that he lives in Greece and I wasn’t there to celebrate with him, I felt like making something sweet to celebrate his birthday even from afar. This sweet is so easy to make and preparation time is about 15 minutes. 


Ingredients:

2 eggs
450gr tea biscuits
½ cup warm milk
2 teaspoons brandy
3 spoons cocoa powder
250gr unsalted butter
1 cup (150gr) icing sugar
1 teaspoon vanilla extract
20gr flaked almonds

Preparation:

Start by cutting your biscuits into big chunks in a ball and spray them with the warm milk, where you need to have added the brandy. Live them aside to soak. Separate the egg yolks from the whites. Whisk the whites until frothy and add half a cup of the sugar. Whisk again until it becomes silky and smooth. Then whisk separately the butter with the remaining sugar, until the sugar is completely dissolved. Add the vanilla extract and the 2 egg yolks. Then add the egg white mix and whisk again but only gently. Finally add the cocoa powder and whisk gently one final time. Keep aside 3 spoons of the mix and then add the remaining to the biscuits stirring very lightly so as to not crumble the biscuits. Don’t worry if not all the biscuits are covered with the mix, they will eventually soak up. Lay them in a small tray or even better a taperwear . Add the remaining mix on the top and smooth it as much as you can. Sprinkle your almonds or else you can sprinkle chocolate flavour strands.
Cover it and place in the freezer for at least 2 hours before attempting to cut, or else overnight in the fridge. You then keep it in the fridge and it is fine for at least a week.
